WHere is a home-style take on a beverage from the seasonal drinks list. Designed as a batch pre-mixed which is loaded with essence of the Christmas time, rendering it perfect for a celebration. Reserve the remaining cordial to use in breakfast cocktails, sweets, or for additional servings of this cocktail.
The Bikini Cocktail
Yields 10 guests
To make the Citrus Syrup (produces 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g granulated sugar
For the Drink (makes 850ml, serving 10)
400ml decent vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine cordial (as made above)
Whole cranberries, to garnish
Mandarin essential oil, as a final touch
Instructions
Making the Cordial: Put every items inside a pot, bring to a light boil, agitating until the sugar dissolves. Then, turn off the burner and let it to cool down completely. Transfer into an sterilised bottle, seal and refrigerate it in the fridge, where it will keep for around a month.
For the Premix: Pour all the liquids into one large bottle, let it rest for an hour, then strain , ideally through a fine cloth, making it perfectly clear.
For serving: Measure 85ml of your premix to a stirring glass packed with ice, gently stirring gently for a minute to cool it down. Strain into an cold coupe glass or similar, decorate with a few cranberries and finish using a light spray with the mandarin essence over the top.
